Top Billing dines at Ash Heeger's new restaurant Riverine Rabbit
Ash Heeger has established herself as an incredible chef with an innovative mind (and palette).
When she returned from working in Heston Blumenthal’s restaurant in the UK, it was to open her own restaurant called Ash.
We visited her second and new restaurant, Riverine Rabbit, to see what delicious dishes we could get our hands on.
Ash has opened Riverine Rabbit with her sister Mandy, and the restaurant feels special from the moment you walk in. The incredible décor features greenery, wood, leather and marble, and a design that makes you feel as though you’re entering a rabbit’s warren.
The name is a tribute to the endangered Riverine Rabbit which has seen numbers decline sharply due to over farming. This ties in with the restaurant’s ethos of cooking and eating sustainably.
Ash keeps a sustainable supply of ingredients and supports local suppliers, while also making sure that if she uses seafood it is ecologically safe to do so.
From a short 3 course menu to a curated 7 course experience there’s something for everyone at Riverine Rabbit. The dishes are all cooked over a fire, and no- there’s no rabbit on the menu!
